Lentil Soup

Here is my recipe for lentil soup. It’s quick, tasty, and vegan, just like the magical gnomes make it. And it’s got CARROTS.

Ingredients

  • 1 lb lentils
  • 3 quarts of water
  • 3 to 5 cloves of garlic
  • 1 large onion
  • 5 carrots of average size
  • 1 Tbsp cumin
  • 1 Tbsp paprika
  • 2 tsp salt
  • 1 tsp black pepper (or to taste)
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice (half a lemon)

Instructions

Sort and rinse the lentils, put them in the water, and boil them for about 30 minutes. Meanwhile, chop the carrots and onion, and crush the garlic. Reduce the heat, and add the onion, garlic, carrots, and all the remaining ingredients. Let it simmer, stirring the pot frequently, until the carrots are cooked.

Optionally, for a creamier soup, you can puree a few cups of it once it’s finished cooking, and then mix it back in with the un-pureed part.
